Why don't we use egg yolks for whipping of egg whites?
We use only the egg whites in the whipping, because egg yolks contain fat which prevents the eggs whipping. However, I also know that heavy creams, rich in fat, whipps better than non-fat creams. What is the function on fat in whipping? What makes it whipped, fat or the protein? What is the difference between cream fat, and egg yolk fat whipping mechanisms? Thanks,
Well, if you mix just egg yolks, will you get whipp? It is not just the air; must be solids, such as sugar, protein to create whip. What is the function of fat?
I have wondered the same thing. I guess I don't actually have an answer, but I wanted to comment.
When air is whisked into egg whites, the mechanical action denatures the proteins in the whites. The denatured proteins coagulate, stiffening the foam and stabilizing the air bubbles. (http://chemistry.about.com/od/howthingsworkfaqs/f/copperbowl.htm) I'm not sure how cream whips, but it is because of the air being Incorporated into the fat, making it less dense and more airy (like how air whipped into oil makes creamy mayonnaise). So with egg whites it whips because of the protein, but cream whips because of the fat. I know that doesn't actually answer your question- sorry.
