Eclair pastry and coffee flavored cream???
Years ago, I tore a recipe and picture out of a magazine of a ring made from eclair pastry, it was hollowed out and filled with a coffee flavored homemade whipped creme. Then there was a coffee flavored glaze drizzled on top. The eclair itself was crispy on the outside and tender on the inside...the cream just melted in your mouth. I made this twice, it was fairly easy...and then lost the recipe. I don't even know what magazine it was in but I have been trying to duplicate it to no avail. Can anyone help>??? THANKS!
Coffee eclairs

Degree of difficulty: Medium
You need:
1 quantity of choux pastry
filling
double cream 275ml
1 tablespoon instant coffee
2 teaspoons boiling water
1 tablespoon caster sugar
Icing
150g icing sugar
2 teaspoon instant coffee
1 tablespoon boiling water
Method:
Pour choux pastry into piping bag, fitted with plain 1cm nozzle. Pipe mixture onto rinsed baking sheet in lengths just over 7.5cm
Bake éclairs on high shelf for 10 minutes, then increase heat 220C for 10 minutes
Remove from oven to wire cooling tray and make a slight hole in sides
For filling dissolve coffee and sugar in boiling water. Beat cream till thick and add coffee mixture stirring to blend. Add to clean piping bag slit éclairs an long one side, pipe in cram and carefully press the tops gently back over cream.
Icing. In small basin dissolve coffee in boiling water, sift the icing sugar into it and stir. Tick cream. Finally, dip the tops of the éclairs into the icing and let the excess drip back into the bowl before returning each on to wire rack.
